What you MUST Know about Gluten Foods and Inflammation, with Dr. Claudia Pillow, author of The Gluten -Free Good Health Cookbook. She is a classically trained chef from the New York Restaurant School, who is grounded by the life sciences, nutrition, and health. In 2007, Claudia received her Ph.D. in Health Studies from Texas Women's University. As part of her dissertation, she developed and tested a celiac disease school screening tool and is currently in the process of making the program available nationally. Prior to earning her doctorate, Claudia worked as a chef and caterer for many years. A MBA from Rutgers University offered her the opportunity to jump to the corporate side of the food industry, where she marketed cheese and natural beverages. Dr. Pillow serves on the board of the Gluten Intolerance Group of North America.
